[Tea from Makinohara Plateau] The Makinohara Plateau has long sunlight hours, allowing thick and nutrient-rich tea leaves to grow. By steaming these leaves for a long time, the tannin (bitterness) content is reduced, and the amino acid theanine (sweetness) increases, resulting in a smooth tea. The leaves become fine, but are characterized by a beautiful deep green color, mellow sweetness, and rich flavor. [Arahataen's Deep-Steamed Tea] Deep-steamed tea made using a method that maximizes the quality of the tea leaves: Arahataen's tea is produced using a deep-steaming method that steams the leaves three to four times longer than regular sencha. [Commitment to Soil] Arahataen believes that "delicious tea can only be made from thick, dark green leaves picked from strong tea trees," and is dedicated to soil preparation and tea cultivation. [Natural Regenerative Agriculture with Rice Husk Compost] Every autumn, rice husks, rice bran, and rapeseed cake are fermented with effective soil microorganisms to create rice husk compost. This compost, rich in umami components, is evenly spread across vast fields to promote the growth of microorganisms in the soil, enriching it and enhancing its natural fertility through natural regenerative agriculture. [World Agricultural Heritage: Shizuoka's Tea Grassland Farming] Tea grasslands are semi-natural grasslands where grasses such as bamboo grass and miscanthus are cut and used as organic matter in tea gardens. This is a common sight in Shizuoka Prefecture. The method of laying the grass cut from the tea grasslands in tea gardens produces higher quality tea. This practice coexists with nature without disrupting its systems. *Shizuoka's tea grassland farming was recognized as a World Agricultural Heritage by the Food and Agriculture Organization (FAO) on May 30, 2013.
